Lecture by Dr. Sabrina Voce from the University of Udine within the framework of the Across Alliance, 5th May 2026
Asst. Prof. Dr. Melita Sternad Lemut, head of the Wine Research Centre at the University of Nova Gorica, hosted on the 5th May 2026 Dr. Sabrina Voce from the University of Udine, who held a talk titled Yeast derivatives: Composition, production and technological uses. Yeast derivatives are used in winemaking as fermentation enhancers and for improving wine quality and stability. The composition of the current yeast derivatives available on the market is not specific to winemaking use, especially because of their strong odour impact. In her lecture, Dr. Sabrina Voce presented the current state of yeast derivatives related to their composition, production and technological uses, as well as the recent scientific advances for improving their chemical composition, thus making them more suitable for specific winemaking purposes. The lecture was primarily intended for students of the School for Viticulture and Enology at the University of Nova Gorica.
The lecture also took place within the framework of the Across European University for Cross-Border Knowledge Sharing, an alliance of European universities that strives, among other things, to strengthen cooperation and exchanges between member universities in the fields of research and innovation. Both the University of Nova Gorica and the University of Udine are members of the Across Alliance.
